The Nilgiri Hills, also known as the Blue Mountains, produce some of India's most overlooked teas. Positioned in Tamil Nadu, these high-elevation gardens experience an occa- sional winter frost—a rarity in the tropics. The result is Nilgiri Frost, a black tea with the boldness of Assam, but the fragrant lift of Darjeeling. It's made in small quantities during cool snaps, creating a bright amber cup with a floral aroma and citrus zip. Picked when the chilly mountain air slows the leaf metabolism, the tea develops sweeter, more com- plex notes of orange blossom, green mango and eucalyptus.
How to serve
Steep two grams of loose leaf in freshly boiled water for three minutes. Longer steeping brings out briskness; shorter preserves the floral notes. Also delightful as cold brew: infuse in cool water for four hours and strain. Nilgiri Frost can take milk or stand alone, hot or iced.
