Ternatea, is a startling blue infusion native to south-east Asia. Add a squeeze of lemon and the infusion turns purple, making it a visually captivating drink. Traditionally used in Thai and Malay cuisine, butterfly pea flower tea is rich in anthocyanins. It is also believed to improve skin and hair health, thanks to its collagen-boosting properties. The flavour is mild and can be enhanced with honey or mixed with other herbal teas. The tea is gaining popularity for its mesmerising colour-changing properties. How to serve

Steep dried flowers in 80°C water until the desired colour is achieved.

This tea can be enjoyed hot or cold.
