This South American "footballers infusion’ is brewed from the leaves of the llex paraguanensis tree and it's not merely a drink; it's a daily ritual for Argentinian footballers and polo players, Brazilian surfers and endurance athletes worldwide. Rich in caffeine, but less jittery than coffee, mate provides a smooth, sustained lift. It's a member of the holly family and, although it prefers subtropical conditions, it may be worth a try, south of the Cotswolds.
For now, the best mate is imported. Try Argentinian 'Rosamonte' for authenticity or smooth Paraguayan or Argentinian leaf, perfect for Westem-style brewing. The Mom- ing Kick' blend is a good intro- duction and can be brewed light or strong (Sir David Beckham once quipped that he likes a brew ‘as strong as Roy Keane's opinions).
How to serve
Allow one teaspoon per 250ml and steep at 80°C-85°C for 3-5 mins. Optional: dabble in blending your own teas by adding honey or mint or garden herbs. Steep it repeatedly in the traditional style.
