Dirty Steak perfectly cooked directly on hot Charcoal with a side of Sweet Potato

Dirty Steak & Sweet Potato, Cooked On Tregothnan Charcoal

The best way to infuse your steak with the smokey tones of truly British charcoal is to lay the steak across the hot embers.

Ingredients:

  • Tregothnan Charcoal
  • 2 Large steaks – Rump or Sirloin
  • 2 Spring onions finely sliced
  • 1 tbsp grate root ginger
  • 1 tsp of Allspice, Cinnamon, Nutmeg, ground Ginger
  • Scotch Bonnet Chilli – finely sliced
  • 1 tsp Thyme
  • Season with Salt
  • 2 Sweet Potato
  • 100g Butter

Method:

  • Mix the Jerk seasoning together and rub half on the steaks
  • Mix the remaining in with butter and roll in greaseproof paper and chill in the fridge
  • Place the sweet potato directly onto coals and bake for 15-20 minutes
  • Add the marinaded steaks and cook on coals for 3 minutes each side
